Our History of Desserts

We have always looked to honour tradition while at the same time being at the fore-front of consumer trends. We have built our reputation in the baking sector by hiring top professionals and upholding rigorous standards. Our first Group site was established in 1984 in the Dordogne region, employing 30 workers. Specialising in the manufacture of frozen unbaked puff pastry dough, the group expanded in France, the UK, the Netherlands and most recently Belgium, developing expertise in areas such as:
Pastry Bases, Flans, Tarts and Pies, Desserts, Cheesecakes, Round Cakes, Traybakes, Mille-Feuilles, Vegan and Gluten Free products. In doing so, the group has brought together hundreds of years of baking experience & regional baking traditions, maximising our capabilities allowing us to provide our customers with great choice and the highest quality products.

Martine Spécialités

Creation of Martine Spécialités, now Mademoiselle Desserts Valade, in Condat sur Trincou, in the Dordogne region. The site employs 30 people and rapidly expands to become the specialist in flans and tarts.

Rank Hovis McDougall (RHM)

Martine Spécialités joins Rank Hovis McDougall (RHM) alongside two sister companies Sofrapain and Le Pain Croustillant (LPC).

Premiere Foods

Acquisition of Rank Hovis McDougall by the group Premier Foods.

Céréa Capital and Azulis

Martine Spécialités separates from Premier Foods, in order to be leveraged buy-out (LBO) by its management team along with two investment funds: Céréa Capital and Azulis; marking the start of the Group’s LBO journey.

Delmotte and 3 Abers

Delmotte and Trois Abers, now Mademoiselle Desserts Broons and Mademoiselle Desserts Saint Renan combine with Martine Spécialités under the banner of Européenne des Desserts. The Delmotte site is specialised in festive desserts and yule logs, while Trois Abers specialises in pastry bases.

Speciality Desserts

Speciality Desserts, now Mademoiselle Desserts Corby, joins the group Européenne des Desserts. Founded in 1995 the site specialises in cheesecakes, hot puddings and cookies and manufactures innovative frozen desserts for the UK Out Of Home market.

Délice du Palais

Délice du Palais, a specialist in choux pastry, pastry sheets and yule logs, now Mademoiselle Desserts Renaison, joins Européenne des Desserts. It has dedicated production lines for the manufacture of fresh and frozen products.

The Handmade Cake Company

Expansion in England continues with the integration of The Handmade Cake Company, a British bakery founded in 1983 and which specialises, as its name suggests, in “handmade” cakes. The site includes a segregated gluten free bakery to answer the growing demand for quality free from cakes and desserts.

The Ministry of Cake

The Ministry of Cake, now Mademoiselle Desserts Taunton, joins the group. With nearly six million units of product sold each year, this company founded in 1865 specialises in authentic British cakes and desserts, including fudge cakes, round cakes, and cheesecakes.

Quality Pastries

Quality Pastries, now Mademoiselle Desserts Weert, joins the Group. An undisputed specialist in mille-feuilles, the site also produces choux pastry and mini-rolls.

Mademoiselle Desserts

Européenne des Desserts, Delmotte, Martine Spécialités, and Speciality Desserts change their corporate identities and, along with The Handmade Cake Company, combine to form Mademoiselle Desserts.

The fifth site in France, Mademoiselle Desserts Thenon, is opened in the Dordogne region. This site is dedicate to the manufacture of tarts and flans.

Pâtisserie Michel Kremer (PMK) joins the Mademoiselle Desserts group. PMK offers a large range of choux pastry, cakes to share, individual desserts and premium desserts.

Délices des 7 Vallées

Délices des 7 Vallées join the Mademoiselle Desserts group. The company founded in 1996 has made a name for itself manufacturing delicious French mini beignets along with other products such as mini-muffins and tropéziennes. The site is based in the Hauts-de-France region and ships products across retail and foodservice both in France and internationally.

IK Partners

Mademoiselle Desserts joins the IK Investment Partners fund.

Having worked relentlessly for over fifteen years on their CSR policy in an effort to generate a positive impact on Society and the Environment, the Group is immensely proud of achieving this key milestone but also sees this as a first step, on which to build for an even more sustainable approach.

Galana

The Mademoiselle Desserts group continues its development and announces the acquisition of the pastry and ice cream activities of Galana, a company founded in 1990 and based in Belgium. Galana specialise, in the production of frozen pastries, cakes, desserts and ice cream, including their iconic vchocolate fondant. The company sells its products across fifty countries both in retail and foodservice.
